Our Story

Scottish chef John Mackenzie founded The Wee Hours Scottish Bakery in 2021 to share his Scottish heritage and lifelong passion for traditional Scottish desserts with people across the United States.

John grew up on the Isle of Skye, where rugged coastlines meet the wild waters of Scotland’s west coast. It was there that our shortbread story began, inspired by his grandmother’s treasured recipe. Over the years, John carefully refined that family recipe into the buttery, delicate shortbread we proudly bake today.

Quality is at the heart of everything we make. We thoughtfully select each ingredient and give every batch the care and attention it deserves, bringing an authentic taste of Scotland to every tin.

Today, John lives in Saint Paul, Minnesota, with his wife and two sons. While building a life and creating new memories in Minnesota, he continues to honor his Scottish roots through the traditions, recipes, and flavors that inspired The Wee Hours Scottish Bakery.
