Our Story

Scottish chef, John Mackenzie, founded The Wee Hours Scottish Bakery in 2021 with a passion to share his Scottish heritage and lifelong love of Scottish desserts with the United States through The Wee Hours Scottish Bakery. 

John grew up on the Isle of Skye, where rugged coastlines meet the raging sea within the breathtaking highlands of Scotland's west coast. The origins of The Wee Hours Scottish Bakery shortbread cookies first began here. From his grandmother's recipe John has spent years developing and perfecting the recipe into a truly irresistible shortbread cookie experience.
